Asian Chicken Coleslaw Salad Recipe

Yield: Serves 4

Total time: 30 minutes

 

Ingredients

  • 1 carrot
  • 1 capsicum
  • 1 cucumber
  • 1/2 coconut
  • 1/4 cabbage
  • 3 inches of ginger
  • 250gm boiled chicken
  • 2 tsp. honey
  • 1 tsp. chilli flakes
  • 1 tsp. vinegar
  • 1 tsp. soya sauce
  • 1 tsp. sesame oil
  • 2 tsp. freshly crushed black pepper
  • 4 tbsp. mustard sauce
  • 5 tbsp. hung curd
  • Salt to taste
  • Fresh coriander for garnish

 

 

 

 

Preparation

  • Shred all the vegetables and the chicken.
  • For the dressing, mix in honey, chilli flakes, soya sauce, sesame oil, black pepper, mustard sauce, hung curd and salt.
  • Toss the vegetables and chicken in the dressing.
  • Serve in half of a coconut shell and garnish with a slice of coconut and some fresh coriander.
